Evi offers you a recipe from the Mani: a potato salad with orange.
The Mani is a region that covers the central peninsula of the Peloponnese. It is a proud and wild land whose cuisine, although prepared with simple ingredients, is surprising.
This easy-to-make recipe adds a zing and a tangy touch to what could be a run-of-the-mill potato salad.
A delight!
Ingredients for 4 people
- 2 beautiful oranges
- 3 boiled potatoes
- 100 gr of olives throumbes (θρούμπες)
- 1 small red onion or 2 shallots
For the sauce
- 4 tablespoons of olive oil
- juice of half a lemon
- ½ teaspoon of thyme honey
- 1 pinch of oregano or thyme (preferably fresh)
- salt and pepper
The recipe
Peel the oranges raw.
Peel the potatoes and cut them into slices or small cubes.
Arrange them in a dish, place the chopped oranges on top, followed by the pitted olives and the sliced onion.
Prepare the sauce separately. Pour at the last moment before serving.
Mix gently.
